Hello —
I’m interested in a resource (book, website, etc.) that provides detailed information and examples regarding the syntax for MS Project functions utilized in creating a customized field (i.e. ProjDurConv, etc.).
There is only a minimal explanation in MS Project, and what is provided is vague (i.e. (expression) — what is this?)

I believe these resources are adequate. If you like, you can also contact me for formula discussions, I guess we are connected, so you can ask me questions by email directly.
Expression is simply a formula composed of some other expressions (e.g., sub-expressions). An expression is nothing more than a+b, so it is composed of operators, built-in functions, field references (e.g. [Text1]), literals (numbers etc…).
